Recipe - Creamy Bacon & Pumpkin Soup
Serves 4 @ 1 point per serve
Ingredients
1 - 1.2kg pumpkin (any variety)
1 cup water
1 onion, finely chopped
pack ww bacon, finely chopped
2 cups skim milk
1 teaspoon curry powder
freshly ground black pepper
Method
1. Cut up the pumpkin and place in steamer (or pot) with 1 cup water. Cook until soft.
2. Place pumpkin and water in a food processor. Process until smooth.
3.Place onion and bacon in a 2-litre microwave save dish and cook on high for 3 minutes. Add the milk, curry powder, and pumkin. Cook on 70% (medium-high) for 6 minutes or until hot.
4. Return to the food processor and process until smooth.
5. When serving sprinking with black pepper if desired.
My comments
If I gave my DH soup for dinner he would ask where the rest (ie the meat) was!!
I love soup though, i'll keep this one in mind for when i'm home alone. Actually that will never happen!!!LOL

i tried this tonight but i did it a bit different - it was really really yum!
I'm not sure if we have WW bacon in NZ, i've certainly never seen it. So i used tegal chicken rashers which are 95% fat free & 1.5 pts for a 200gm packet.
I normally make pt free soups so i thought i'd try make this 0.5pts per serve.
I used one whole pumpkin, 4 cups water, 4 cups milk, pack of chicken rashers, an onion & a tablespoon of bacon stock powder.
total points for the pot was 6pts, & theres 8 cups of liquid, before all pumpkin, onion & bacon so i think i can call it half point serves :)
